For Wes, owner and driving force behind The Streetfood Club, inspiration comes from world cities where chaos becomes charisma: Mexico City, Miami, Bangkok, Melbourne.

“We thrive on contrast,” Wes says. “Botanical versus urban, kitsch versus chic. Every element has to contribute to a story of organised chaos.”

“We bring streetfood flavours to a level you won’t find on the street. We keep it recognisable, but never predictable.”

His culinary principles revolve around impactful flavour, colourful and energetic plating, dishes designed for effortless shareability, and a playful approach to world cuisine with a creative twist.

Influences span Mexico, Korea, Latin America and Southeast Asia — but only dishes the team can “own” make it to the menu.

“Presentation isn’t decoration. It’s part of the flavour. The plate determines how guests read the dish;  fresh, bold, raw, refined.”
